2005 HAPPENINGS



MBF 2005 was a terrific 11th anniversary celebration!
Lots of friends, food and frivolity - as well as great baskets and related techniques!


Thanks to all who came and made it such fun! The reprise of Swinerella and cast was a blast!
Great audience participation!


Here's a look at some of the highlights from the conference and recipes (below) for a sampling of this year's new yummy treats.

Lemon Squares
(from the St. John the Baptist Church recipe book)


In large bowl, cream together:
1 c butter
1/2 c powdered sugar

Add dash of salt.
Add 2 c flour, beating till blended.

Spread mixture evenly in bottom of ungreased 9"x13" pan. Bake in 350 degree F oven for 20 minutes.

While baking, beat 4 eggs till light in color.
Beat in 2 c sugar.
Add and beat till blended:
1/3 c frozen lemon juice
1/3 c flour
1 tsp baking powder

Pour lemon mixture over baked bottom and continue baking 15-20 minutes till custard is set.
Remove, cool completely and sprinkle with 2 tbsp sifted powdered sugar for topping.



Neiman Marcus Cookies

Cream together:
2 c butter
2 c sugar
2 c brown sugar
4 eggs
2 tsp vanilla

Mix together, then add to above mixture:
5 c blended oatmeal (powder)
4 c flour
1 tsp salt
2 tsp baking powder
2 tsp baking soda

Add:
24 ozs chocolate chips
1 8-oz. Hershey bar, grated
3 c chopped nuts

Drop large spoonfulls on lightly greased sheet.
Bake at 375 degrees F for 10 minutes.



White Chocolate / Macadamia Nut Cookies

Cream together:
1 c shortening
1/2 c white suger
1/2 c brown sugar

Add:
1 egg
1 tsp vanilla

Add:
1/2 tsp salt
1/2 tsp baking soda
2 c flour
1 pkg white chocolate chips
1/2 c macadamia nuts, chopped

Bake at 350 degrees F for 10 minutes.



Banana Bread

Mix together:
1 c white sugar
1 c brown sugar
2 eggs

Add:
3 c flour

Mix together:
1 c buttermilk
1/2 tsp baking soda
Add to egg mixture.

Add:
3 mashed ripe bananas
1/2 c nuts, chopped
opt: 1 c dried cherries or other dried fruit

Bake at 350 degrees F for 45-60 minutes.



Peanut Butter Rice Krispie Bars

1 c sugar
1 c Karo Syrup (white)
1 1/2 to 2 c peanut butter (smooth or crunchy)

Melt together in microwave until well blended.

Add: 6 c Rice Krispies.

Press into large cake pan.

Melt a 12 oz. package of chocolate chips in microwave and
spead over krispie mixture.
Cool.



Cheese Olives

1/2 pound sharp cheddar cheese, grated
1/4 pound butter + 2 tblsp
1 c flour
1/4 tsp salt
1/2 tsp oregano

Knead like bread to mix - may add some milk to help consistency.

Take a bit of dough and cover each pimiento stuffed olive.

Bake at 375 degrees F for 15-20 minutes OR 325 degrees F for 30 minutes (or so).

Best if served warm.
